Uncorked: A Cabaret with Cabernet Sauvignon at Scarlett Bangkok

Bangkok, 7 March 2024 – Scarlett Bangkok will host its first wine pairing dinner series of the year come 29 March 2024. Named as Uncorked: A Cabaret with Cabernet Sauvignon, guests can expect a full-bodied dance of flavours, aromas, and textures that complement each other perfectly. 

Guests are invited to embark on a six -course menu which will feature an array of carefully curated French-inspired dishes, created to be paired with Cabernet Sauvignon selections from across the globe. 

Uncorked: A Cabaret with Cabernet Sauvignon Menu  

  • Aperitif  |  Pastis 

  • 1st Course  |  Thelema Cabernet Sauvignon 2018, South Africa 
    Spearmint – blackcurrant – cinnamon – chocolate – green pepper 
    Paired with: Bleu de cire, frisée, red oak leaf, fig mustard vinaigrette 

  • 2nd Course  |  Amiral de Beychevelle Saint Julien 2018, France 
    Ripe red fruits – herbal – pencil shaving – tobacco – silky mouthfeel 
    Paired with: Le pâté en croute, green condiments 

  • 3rd Course  |  Chateau Siran Margaux 2019, France 
    Kirsch – dried lavender – spices – chocolate – cedarwood – mineral 
    Paired with: Roasted duck breast, beetroot, red spinach, red fruit gastrique 

  • 4th Course  |  Dominus Othello Napa Valley 2016, USA 
    Tobacco – leather – vanilla – oak – blackcurrant – cassis 
    Paired with: Slow-cooked lamb, spices, organic fig, creamy polenta, chimichurri 

  • 5th Course: Chateau de Pez Saint Estephe 2019, France 
    Liquorice – Virginia tobacco – redcurrant – blackberry – floral iris – raspberry jelly 
    Paired with: Tomme brulée, mesclun, blueberry 

  • 6th Course  |  Echeverria Founder Selection Maipo Valley 2015, Chile 
    Dark plum – blackcurrant – menthol – eucalyptus – black pepper – bitter chocolate 
    Paired with: Chocolate mousse, strawberry tartare, ginger, thyme 

  • Digestif  |  House-made Coffee Liqueur
