To celebrate the flourishing and vibrant season, Chef Gabriele introduces new and imaginative dishes for the inspiring seasonal menu.

Bangkok, 22 March 2024 – Just in time for the blossoming of spring, Salvia at Grand Hyatt Erawan Bangkok unveils an enticing seasonal selection, ‘Spring Passion: A Culinary Tale’, crafted by its head chef Gabriele Olivieri to welcome the arrival of the spring season. Embracing the essence of Italian culinary excellence, this fresh offering promises authentic Italian flavours and is available for your enjoyment until 31 May 2024.

To celebrate the flourishing and vibrant season, Chef Gabriele introduces new and imaginative dishes for the inspiring seasonal menu, carefully selecting fresh seasonal spring ingredients such as salmon, blue swimmer crab, white asparagus and zucchini flowers, all perfect for this time of year. Delicate zucchini flowers, now in full bloom, offer their fresh petals, while white asparagus, a healthy and fat-free vegetable rich in vitamin C, adds a nutritious touch to these special creations.

From delicate zucchini flowers to succulent blue swimmer crab, each dish showcases the beauty and bounty of the season. To embrace the season of new beginnings and lively colours, I am thrilled to transport all guests to Italy as they savour the diverse array of spring flavours and experience the essence of Italian culinary tradition”, said Gabriele Olivieri, Chef de Cuisine of Salvia.

Explore the tempting selections from the Spring Passion: A Culinary Tale à la carte menu, including:

·        Fiore di zucchina – A springtime classic featuring fresh zucchini flowers filled with ricotta and rich, creamy squacquerone cheese, baked to perfection. It is served alongside a vibrant fresh tomato salsa and grape saba.

·        Trota salmonata – This wonderful dish features salmon trout readily available from March to May. With its mild flavour, it pairs well with fresh white asparagus, known for its subtle sweetness compared to green asparagus.

·        Pizza primavera – A timeless classic adorned with mozzarella fior di latte, Taleggio cheese, fresh green asparagus and delicately rolled pancetta. Fresh from the wood-fired oven, this delicious creation promises to leave taste buds tingling with satisfaction.

·        Risotto al granchio e piselli – Savour a comforting delight showcasing the freshly sourced blue swimmer crab cooked with carnaroli rice and fresh spring peas. Enhanced with a drizzle of chilli oil and crispy garlic chips, each bite promises to warm the soul.

To elevate the dining experience, indulge in the refreshing and aromatic cocktail that perfectly complements the seasonal menu. Introducing the Montenegro Sour, a blend of Italian Amaro Montenegro liqueur and zesty lemon juice. With its delightful fusion of floral and bittersweet herbal flavours, this cocktail offers a truly distinctive drinking experience.
