The journey begins with the show-stopping Pithivier of Pigeon, where pigeon, foie gras and smoked pork belly are paired with cabbage and a rich corsé jus. Other highlights include the elegant Quail Tournedos with Foie Gras, the Apicius Duck Breast served with celeriac purée and saffron parsnip, and the comforting Marinated Baby Chicken with creamy polenta and green condiment.
Completing the selection is the classic Poularde Albufera, featuring roasted poularde, spring vegetables and a silky, flavourful Albufera sauce.
